Chicken Cardinale

If you are a fan of proscuitto, marsala, and mozzarella then you will love this chicken recipe. It is packed full of flavor and is is a very quick dish to make. You will know when it is cooked when tasting it. Serves 2.

Chicken Cardinale

Ingredients

For 2 people ()

  • 2 chicken breasts, divided into bite size pieces
  • 0.25 pound of fresh mushrooms
  • 2 slices of prosciutto
  • 2 slices of mozzarella cheese
  • 0.25 cups marsala wine
  • 1 teaspoon basil
  • 1 pinches salt and pepper to taste
  • 3 tablespoon butter
  • 1 oregano
  • 1 fresh parsley, chopped

Directions

  1.  
  2. Start by melting butter in a saute pan until melted. Don’t do this for too long you don’t want to burn the butter.
  3. Saute the chicken breasts and mushrooms until the chicken is lightly brown.
  4. Add the proscuitto, oregano, salt and pepper to the pan and taste for extra seasoning.
  5. Add the marsala wine and cook rapidly to begin the reduction process and reduce the wine by half. All the ingredients will all be mixed together to make a wonderful sauce.
  6. Remove the chicken in to a broiling pan, add the mozzarella cheese on top of the cheese and continue broiling until the cheese has melted.
  7. Sprinkle the chicken cardinale with fresh parsley and you are done.
