Grilled Fish with Tangy Salsa

Ingredients

For 4 people ()

  • 4 white fish steaks
  • 3 teaspoon lemon rind, grated
  • 1 tablespoon lemon juice
  • 2 tablespoon olive oil
  • 1 pinches black pepper
  • 1 cups chopped tomatoes
  • 1 tablespoon of lemon juice
  • 1 tablespoon garlic, crushed
  • 1 tablespoon olive oil
  • 1 pinches salt and freshly ground black pepper
  • 1 red onion, finely chopped
  • 1 small red chilli, seeds removed and finely chopped

Directions

  1. Combine the lemon rind, lemon juice and olive oil and freshly ground black pepper for extra seasoning in a bowl. Pour over the fish and allow to marinate for 30 minutes in the refrigerator to really develop the flavors.
  2. Lightly oil a preheated BBQ plate or grill and cook the fish for 3-4 minutes on each side, or until the fish is tender.
  3. To make the salsa which will accompany the grilled fish, mix together the chopped tomato, onion, chilli, garlic, lemon juice, salt, pepper and a little bit of olive oil in a bowl, and mix all the ingredients well with your hands.
  4. Serve the fish steaks on a serving plate topped with the salsa.
